Keto Egg Roll in a Bowl Recipe

Ingredients


1 lb (450g) ground pork, ground chicken, or ground turkey


2 tbsp sesame oil (divided)


4 cups shredded green cabbage (or a coleslaw mix without

dressing)


1 cup shredded carrots (omit for stricter keto)


3 cloves garlic, minced


1-inch piece of fresh ginger, grated (or 1 tsp ground ginger)


3 green onions, thinly sliced (save some for garnish)


3 tbsp soy sauce


1 tbsp rice vinegar


1 tbsp sriracha (optional for a spicy kick)


2 large eggs


1 tsp sesame seeds (for garnish, optional)




Step-by-Step Instructions




Step 1: Cook the Protein


Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat.


Add the ground pork (or your chosen protein) and cook,

breaking it up with a spatula, until it’s browned and cooked through (about 5-7 minutes).


Remove the cooked protein from the skillet and set it aside.


Step 2: Sauté the Aromatics


In the same skillet, add the remaining 1 tbsp sesame oil.

Add the garlic, ginger, and the white parts of the green onions. Sauté for about 30 seconds, until fragrant.


Step 3: Add the Vegetables


Stir in the cabbage and carrots (if using).


Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.


Step 4: Combine the Ingredients


Return the cooked protein to the skillet.


Pour in the soy sauce, rice vinegar, and sriracha (if using). Toss everything to combine evenly.


Step 5: Cook the Eggs


Push the mixture to one side of the skillet, creating a space on the other side.


Crack the eggs into the empty space and scramble them, cooking until just set.


Stir the scrambled eggs into the rest of the dish.


Step 6: Garnish and Serve


Remove the skillet from heat and sprinkle with sesame seeds and the reserved green onion tops.


Taste and adjust seasonings ( more soy sauce or sriracha) as needed to desired taste.


Step 7: Plate and Enjoy


Serve hot as-is or pair with a drizzle of spicy mayo or extra sriracha for added flavor.


Pro Tips:


For extra crunch, top with crushed pork rinds or slivered almonds.


To boost healthy fats, add a dollop of avocado or drizzle extra sesame oil before serving.


Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet for the best texture.
